  • 1/2 cup of Erbology Amaranth Grain
  • water
  • 1/2 onion
  • mint leaves
  • 1/2 cucumber in slices
  • lemon juice
  • Salt and pepper
  • olive oil 
  1. Place the amaranth into a small bowl and cover with water. Cook following the instructions.
  2. Stir, then set aside.
  3. Cut the cucumber into quarters. Transfer the diced cucumber to a serving bowl. 
  4. Add the mint and onion to the cucumber and mix well until combined. 
  5. Add the amaranth to the cucumber mixture.
  6. Drizzle over the lemon juice and olive oil and season, to taste, with salt and pepper. Mix well to coat the ingredients in the liquid. 
  7. Ready to serve.
