- 1/2 cup of Erbology Amaranth Grain
- 1/2 onion
- mint leaves
- 1/2 cucumber in slices
- lemon juice
- Salt and pepper
- olive oil
- Place the amaranth into a small bowl and cover with water. Cook following the instructions.
- Stir, then set aside.
- Cut the cucumber into quarters. Transfer the diced cucumber to a serving bowl.
- Add the mint and onion to the cucumber and mix well until combined.
- Add the amaranth to the cucumber mixture.
- Drizzle over the lemon juice and olive oil and season, to taste, with salt and pepper. Mix well to coat the ingredients in the liquid.
- Ready to serve.
